eating again
man, i started eating again, and the scales show it. i used to joke how people who worked in an industry where they sat a lot tended to get fat. well, guess what: i am that guy, and i now weigh #192. but, the good news is, i'm actually starting to eat meals again. you know, with vegetables. and meat. no more dinners of cheese and crackers, or cheese and pasta. or potato chips.
to that end, saturday, i made a delicious pork loin roast. it was a standard mini-pre-marinated 4(?) lb loin (dijon, i believe? i'd have to check the store, as i dont remember). i put it in a small roasting pan surrounded by a bag of kraut, threw a lid on, and threw it in the oven at 350. mmm. if you do this, remember to check it about every hour and add water. after about 3 and a half hours, the internal temp of the meat was finally high enough, and I got to enjoy the spoils.
my god, it was good. kraut with fat is good stuff, and the loin turned out nice and tender. i saved most of the kraut to be used in something else -- not certain what yet. but, i also had some good leftovers for today's lunch.
last night, i made some spicy sausage sandwiches, trying to clean out the freezer. tonight is turkey time. turkey chili, that is. i'm determined to start cooking for one, and not 10. it's rough coming up with things that only make 1-2 filling meals -- but i can do it.
plus, i'm battling a cold, so I have to eat healthier.
